...It just occued to me that my dragons grow to be large enough that I could probably give them "grenade" launchers capable of handling Kanuckistani planet crackers.

Knowing you, Kanuck, those grenade launchers still only need to be the size of the Noisy Cricket from Men in Black. The only reason you'd need dragons to wield them would be to handle the weapon's recoil without getting mortally wounded from firing the damned things.
